I reckon there is a generation of young people that may not have ever eaten cottage cheese? Cottage cheese has kind of vanished from our existence over here, when back in the 70s it was one of the most popular diet foods and so it should be. Its high in protein, low in fat, and dairy is full of calcium and one of the most important whole foods around. I like to eat it a bit like Burrata and this Californian breakfast is a great example of that.
California Breakfast
Ingredients
Serves 2
2 free range eggs
6 slices Parma ham
½ cantaloupe melon
250g Arla high protein cottage cheese
a handful mint leaves, shredded
a handful basil leaves, shredded
1-2 tbsp fresh lemon juice
really good extra virgin olive oil
A really good grating of black pepper
Malden Sea salt
Prep time 5 minutes
Cooking time 6 minutes
Directions
Pop the eggs in to boil. The perfect egg for this is a 6 minutes boil for a slightly gooey middle. Rinse them under cold water and peel, then dry and cut in half
Between two plates add the halved eggs, cottage cheese, Parma ham and melon. Mix together the mint and basil with lemon and extra virgin olive oil. Top with the lemon and herb oil and plenty of black pepper and salt and serve right away
